Jacky Rigaux, ardent advocate of terroirs, returns te a study of the "dimates" of Burgundy, which he defines as "carefully demarcated vineyard parcels each capable of producing a wine with a distinct personality". Aubert de Vilaine, for whom a "climate" represents "an alchemy between a place, nature, people and centuries", makes a precious contribution te this work. The text is studded with wise words from winegrowers, ail of them concurring with the opinion expressed by Dominique Lafon: "It is important te ask oneseif if the liquid in the glass matches tue place from where Hie wine comes."
